There isn’t a sane person young or old who can resist these scrumptious morsels of melt in your mouth goodness. The melange of brown and castor sugars, melt in your mouth candy melts and slap yo mama choco chip goodness–decadent devilish butter all enriching eggs and the one secret ingredient that all meld together to make this sinful cookie worth it…Exhales….now that was a mouthful…whooo!
Without further ado let’s get crackin!
The Cast of Characters: Butter, Brown Sugar, Sugar, Eggs, Vanilla, Flour, Baking Soda, Salt, Instant Coffee, Candy Melts,Chocolate Chips and Cornflakes.
To start us off in this insanely sweet venture we start by mixing the light brown and castor sugars with butter. Give that a whirl on low/medium speed in the mixer until everything is well amalgamated. Yes we are talking about cookie dough…I know the minute I mentioned amalgam.. your mind just went straight to the fillings in your mouth, you couldn’t even wait for me to finish could you? Well I can’t blame you– we are talking about sugar and cookies after all..but you can visit your dentist later…for now work awaits
Add the vanilla extract and instant coffee then some more whirling for that much-needed amalgamation. Now, if ever there was more a more underrated thing then vanilla would be it, it’s criminal really…how else do you explain that boring things and people are charitably referred to as vanilla…really now?! Vanilla boring? Now that’s insane and criminal. Vanilla adds oomph and flavour to everything!!
So, on to the next step…
An egg joins this veritable impressive cast of characters, whirl some more then , add in half the flour and mix well, finally the egg yolk, more whirling and the rest of the flour…
See that? Do you see that? Candy melts…mmmmm yeah as if we didn’t already have enough sweetness in there, I go and suggest candy…yeah get your spatula and make some more amalgamating movement albeit with care, we don’t wanna break up the candy.
I saw that…you snuck in a lick, didn’t you? Well I don’t blame you, I may have had a little taste myself, I mean how else do you know if the flavours are melding well if you don’t taste. Ok just one more taste but that’s all, we have to bake these bad boys so honey contain your greed.
Shhhh…..secret ingredient alert…cornflakes….yeah– shhhhh
We need some crunch with the melt in the mouth goodness. Just like a good lover, some contrast is needed to keep things interesting. I like food that hits the yum spot real good and this will be a head on collision I guarantee. Now break out a baking tray and an ice cream scoop or a couple of spoons and follow me to the next step…we are nearing the end, which is really the beginning– the beginning of a long-term relationship – I see these cookies being a part of your life till old age takes away all your teeth, but even then you could just gnaw off tasty chunks with your gums and just let these melt in your mouth and all you would have to do is swallow and smile– like I said long term relationship.
For best results, chill in the fridge for at least 30 minutes.
No need to grease your tray, but you could line with parchment paper or use a silicon mat. Drop well spaced spoonfuls onto the tray and bake.
Go on, try these cookies and make them for your loved ones and I promise if they don’t already love you back, then you will think this is some sorcery when they won’t be able to leave your side after.
MELT IN YOUR MOUTH CANDY & CHOC CHIP COOKIES
1 cup Firmly Packed Brown Sugar
1/2 cup Castor Sugar
1 egg + 1 yolk
2 tsp Vanilla Extract
2-1/4 cups + 2 TBsp, All-purpose Flour
1 tsp Instant Coffee (I add coffee to all my chocolate treats, you can’t taste it but it serves to enhance the chocolatey taste)
1 tsp Bicarbonate of Soda
1-1/2 teaspoon Salt
2 TBsp Cornflakes, Slightly Crushed With Rolling Pin
3/4 cups Chocolate Chips
1 cup mixed candy melts (I use Wiltons)
Preheat oven to 180C
In a bowl, stir together butter, brown sugar, and white sugar until combined. Add eggs and vanilla and stir together. If you use a mixer like I did then use it on low-medium speed, we are not whipping air into this, just mixing very well.
In a separate bowl, stir together flour, instant coffee, baking soda, and salt. Add to wet ingredients in batches, stirring gently after each addition. Stir in cornflakes.
Stir in chocolate chips.
Drop balls of dough on a cookie sheet and bake for 11 to 13 minutes. Remove from cookie sheet and eat warm.
